If what we get in Gnome is anything like the nice, seamless support for
pdf's we get in Windows in most cases, I will be overjoyed. While I'm sure
it uses the same libraries as you say, doing the pdf2txt thing is rather
cumbersome unless you can write code and can script. What will be really
exciting is when interactive pdf is supported in Linux. I am encountering
it more and more these days. Earlier this year, I had to fil out a leave of
absence form sent to me in PDF. I couldn't figure out how to do it in
Linux so, I had to use Windows.

the "hacks" you refer to so lightly e.g. pdf2txt -- use the
same underlying mechanisms and libraries that gnome3 uses for tagged PDF
-- you wont getting anything more or anything less. Use what works for you
by all means --
